For when you want a healthier chocolate chip cookie, this is the recipe for you. These cookies are vegan + keto (grain-free, gluten-free, dairy-free, soy-free)

Ingredients

Scale
  • 2 cups + 2 tbsp super-fine almond flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup coconut oil OR butter, melted
  • 1/2 cup monk fruit sweetener
  • 1 teaspoon pure vanilla extract
  • 2 flax “eggs” (2 tbsp ground flax meal + 4 tbsp warm water) OR 1 egg
  • 1/2 cup sugar-free dairy-free chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper
  2. If making flax eggs, combine ground flax meal + 4 tbsp warm water in a small bowl and let sit for 5 minutes
  3. In a large bowl, mix together the almond flour, baking powder and salt
  4. In a separate bowl whisk together the coconut oil or butter, monk fruit sweetener, vanilla and (flax) egg
  5. Add wet ingredients to dry ingredients, then fold in chocolate chips
  6. Chill dough for 10 minutes in the refrigerator
  7. Form dough in 12 balls and press down into discs
  8. Bake for 10-12 minutes and transfer to cooling rack
