Making “healthier” versions of baked goods is always a tricky thing. I’m not someone who is easily fooled into liking something just because it’s healthier if in reality it tastes like *insert poo emoji.* So I hope you’ll trust me when I say I really, really love how these Vegan Keto Chocolate Chip Cookies turned out!

For when you want a healthier chocolate chip cookie, this is the recipe for you. These cookies are vegan + keto (grain-free, gluten-free, dairy-free, soy-free)

Ingredients
- 2 cups + 2 tbsp super-fine almond flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup coconut oil OR butter, melted
- 1/2 cup monk fruit sweetener
- 1 teaspoon pure vanilla extract
- 2 flax “eggs” (2 tbsp ground flax meal + 4 tbsp warm water) OR 1 egg
- 1/2 cup sugar-free dairy-free chocolate chips
Instructions
- Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper
- If making flax eggs, combine ground flax meal + 4 tbsp warm water in a small bowl and let sit for 5 minutes
- In a large bowl, mix together the almond flour, baking powder and salt
- In a separate bowl whisk together the coconut oil or butter, monk fruit sweetener, vanilla and (flax) egg
- Add wet ingredients to dry ingredients, then fold in chocolate chips
- Chill dough for 10 minutes in the refrigerator
- Form dough in 12 balls and press down into discs
- Bake for 10-12 minutes and transfer to cooling rack

These Vegan + Keto Chocolate Chip Cookies are, of course, delicious straight out of the oven, but I found they get an even better texture after they’ve cooled. They are firm yet soft and the perfect amount of sweetness.
And when I say these are healthier, I mean it. Now, these babies are grain-free, gluten-free, dairy-free, soy-free, and nearly sugar-free! LIKE, WUT.
My favorite way to make these Keto Chocolate Chip Cookies:
If you’re strictly vegan/plant-based, then go with the flax “eggs” + coconut oil in this recipe. However, if you’re not and want to keep these cookies low carb, grain-free & Keto-friendly, then I would opt for using 1 real egg and butter instead. In truth, it really takes these cookies next level.
Some other notes on ingredients / substitutions:
- I wouldn’t recommend subbing in any other flours, as almond flour is a distinct texture that would require adjustments in other measurements.
- Other sweetener options are regular sugar or coconut sugar. However, I wouldn’t recommend honey or maple syrup
- Instead of coconut oil you could also use 1/2 cup of your favorite regular or dairy-free butter
- Instead of flax eggs you can use ONE regular egg (I actually prefer the cookies with real egg)
