This Plant-Based Chickpea Salad Melt is an easy vegan sandwich recipe, perfect for lunch!
1. In a large bowl mash the chickpeas using a masher or fork. Add in celery, red onion & spices, then mix in mayo and combine well.
2. Spread chickpea salad on bread, top with tomato slices and 1 slice of cheese. Toast or broil until cheese melts. 3. Top with avocado. Enjoy open-faced or top with another slice of toasted bread.
