Say hello to your new favorite vegetarian sandwich. this Plant-Based Chickpea Salad Melt is vegan comfort food at its finest and such a delicious & filling lunch.
If you couldn’t tell, this is a twist on the classic tuna melt, but as someone who isn’t crazy about tuna I love this version even more. Plus you’re getting the fiber and plant-based protein from chickpeas! See below for how to make it.

This Plant-Based Chickpea Salad Melt is an easy vegan sandwich recipe, perfect for lunch!

Ingredients
- 1 can low sodium chickpeas, drained and rinsed
- 3–4 tablespoons mayo (regular or vegan spread)
- 1 celery stalk, diced
- 1–2 tbsp diced red onion
- 1/4 teaspoon garlic powder
- salt & pepper to taste
- your favorite bread
- sliced tomato
- sliced avocado
- regular cheddar or vegan alternative
Instructions
1. In a large bowl mash the chickpeas using a masher or fork. Add in celery, red onion & spices, then mix in mayo and combine well.
2. Spread chickpea salad on bread, top with tomato slices and 1 slice of cheese. Toast or broil until cheese melts. 3. Top with avocado. Enjoy open-faced or top with another slice of toasted bread.

The chickpea salad is delicious on it’s own or on any sandwich or salad. You can also easily make it ahead of time to have for healthy lunches throughout the week.
Some notes on ingredients / substitutions:
- You can use regular mayonnaise, but I usually use Hellmann’s Vegan Dressing & Spread
- My favorite vegan cheese for this recipe is VioLife cheddar
- If you don’t like celery or onion you can leave either of those out
- If you don’t like mayonnaise, you could use mashed avocado
- This chickpea salad is also great as a topping on avocado toast, stuff as “lettuce wraps,” mix in any other veggies you like, or even some crushed nuts for some added crunch
