Ingredients
- 8 oz block feta, drained
- 3/4 cup plain Greek yogurt
- 2 tablespoons olive oil
- zest of 1 lemon
- juice of 1/2 lemon
- 10 oz hummus
- 1/3 cup cucumber, diced
- 1/2 cup grape tomatoes, halved
- 1/4 cup kalamata olives, chopped
- 1/4 cup red onion, diced
- remaining juice of the lemon
- 1 tablespoon chopped parsley
- fresh pita or pita chips for dipping
Instructions
- Place feta, Greek yogurt, olive oil, lemon juice and lemon zest in a food processor. Blend until creamy & smooth consistency (add more olive oil if needed)
- Spread feta to bottom of 9-inch pie or baking dish, then evenly spread on layer of hummus
- Evenly add layers of cucumber, tomatoes, olives and onion
- Squeeze lemon juice over everything and sprinkle on parsley
- Enjoy by dipping with fresh pita, pita chips or crackers

What pita chips should I use?
There are so many great pita chip brands out there, but I do have a few I recommend (;
- Stacy’s is a classic with lots of different flavor profiles and a great crunch.
- Simple Mills is made with high-quality, good-for-you ingredients.
- Milton’s makes incredible gluten-free crackers (so, not technically pita chips, but they’ve got a similar flavor) and they have a few different flavor options.
In addition, you can enjoy this dip with a range of veggies. I like it with carrots or cauliflower.
Is there a dairy free option?
Yes! Swap out the feta cheese for Trader Joe’s vegan feta and a plain nondairy yogurt. It will come out just as delicious!
