This easy summer shrimp and quinoa salad is the best recipe for when you want to whip up something simple yet still bright and tasty! A light and refreshing summer salad that is also gluten-free.

Ingredients

Scale
  • 3 cups cooked quinoa
  • 3/4 lb cleaned & de-tailed shrimp
  • 1/2 red onion, diced
  • 2/3 cup halved cherry tomatoes
  • 1/3 cup feta cheese crumbles
  • 2 cups arugula
  • 1 ripe avocado, cubed
  • 2 tbsp fresh parsley
  • 3 tbsp extra virgin olive oil
  • salt & pepper

Instructions

  • Cook shrimp stovetop in oil until pink on both sides. Then set it aside to cool
  • In a large bowl combine all of the ingredients, tossing in the shrimp and avocado last
  • Season with salt and pepper to taste. Then you can serve this dish room temperature or chilled
