- 3 cups cooked quinoa
- 3/4 lb cleaned & de-tailed shrimp
- 1/2 red onion, diced
- 2/3 cup halved cherry tomatoes
- 1/3 cup feta cheese crumbles
- 2 cups arugula
- 1 ripe avocado, cubed
- 2 tbsp fresh parsley
- 3 tbsp extra virgin olive oil
- salt & pepper
Instructions
- Cook shrimp stovetop in oil until pink on both sides. Then set it aside to cool
- In a large bowl combine all of the ingredients, tossing in the shrimp and avocado last
- Season with salt and pepper to taste. Then you can serve this dish room temperature or chilled

Great recipe and so easy to make. Cooked the shrimp in a little garlic butter and added a cucumber just for more veggies. I think just the olive oil dressing would taste great but I added an easy lemony garlic vinaigrette. Leftovers today and I’m going to throw in some artichoke hearts. Again, thanks for a great and versatile recipe that we will make often!
