Spinach and Artichoke Cheese Fries

Rich and creamy spinach and artichoke dip meets perfectly roasted sweet potato fries.

Ingredients

  • 2 large or 3 medium sweet potatoes, cut into fries or wedges
  • 1 tbsp olive oil
  • 5oz plain Greek yogurt
  • 1 cup shredded mozzarella cheese
  • 3/4 cup shredded parmesan cheese
  • 2 cups fresh baby spinach *
  • 3/4 cup artichoke hearts, drained from oil and diced
  • 1 tsp Primal Palate garlic & herb seasoning **
  • salt & freshly ground black pepper to taste

Instructions

  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper and/or cooking spray
  2. Toss the sweet potato fries with olive oil, salt & pepper. Spread out on baking sheet and bake for 20-30 minutes, flipping midway, until sweet potatoes start to brown and crisp
  3. In a separate bowl combine greek yogurt, cheese, spinach, artichokes & spices
  4. Spread cheese mixture on the sweet potato fries (either on baking sheet or a cast iron pan) and broil for 5-10 minutes, until cheese gets bubbly and just starts turning golden brown

* or 1 cup frozen spinach, thawed & strained
** or a mixture of garlic powder + your favorite herbs
