Spinach and artichoke dip meets french fries…name a more match made in heaven comfort food duo. These Spinach and Artichoke Cheese Fries are just a teeny tiny bit on the healthier side by using Greek yogurt (instead of cream cheese) and sweet potato fries, but trust me – there’s no shortage of cheesy, flavorful comfort food going on here.

Spinach and Artichoke Cheese Fries
Rich and creamy spinach and artichoke dip meets perfectly roasted sweet potato fries.

Ingredients
- 2 large or 3 medium sweet potatoes, cut into fries or wedges
- 1 tbsp olive oil
- 5oz plain Greek yogurt
- 1 cup shredded mozzarella cheese
- 3/4 cup shredded parmesan cheese
- 2 cups fresh baby spinach *
- 3/4 cup artichoke hearts, drained from oil and diced
- 1 tsp Primal Palate garlic & herb seasoning **
- salt & freshly ground black pepper to taste
Instructions
- Preheat oven to 400 degrees. Line a baking sheet with parchment paper and/or cooking spray
- Toss the sweet potato fries with olive oil, salt & pepper. Spread out on baking sheet and bake for 20-30 minutes, flipping midway, until sweet potatoes start to brown and crisp
- In a separate bowl combine greek yogurt, cheese, spinach, artichokes & spices
- Spread cheese mixture on the sweet potato fries (either on baking sheet or a cast iron pan) and broil for 5-10 minutes, until cheese gets bubbly and just starts turning golden brown
