There are lots of baked oats recipes out there, but these S’mores Baked Oats might just top them all. If you don’t believe me, then you’ll just have to try them (; This is a rich and decadent breakfast that will both satisfy your sweet tooth and leave you full for hours. Honestly, these taste like cake… and there’s nothing better than having cake for breakfast. Am I right?!
The best thing about baked oats is that they’re made entirely in the blender. All you have to do is blend these ingredients together, pour it into a dish, pop it in the oven, and you’re done. Not only are baked oats easy to make, but there are also so many different flavor combinations you can make! Ingredients
- 1 tablespoon flaxseed meal
- 1 1/2 tablespoons warm water
- 1/2 cup rolled or quick oats
- 1/4 teaspoon baking powder
- 2 tablespoons cashew butter
- 1 tablespoon maple syrup
- 1/4 teaspoon vanilla extract
- 1/4 cup milk of choice
- 2–3 tablespoons chocolate chips
- 2 tablespoons mini marshmallows
- 1 sheet graham crackers, crushed
Instructions
- Preheat oven to 350 degrees
- First make the flax “egg” by combining flaxseed meal with water in a small cup or bowl and let sit for 5 minutes
- Put oats, baking powder, flax egg, cashew butter, maple syrup, vanilla and milk into a blender and blend until smooth consistency. Fold in the chocolate chips
- Pour into a greased oven-safe bowl and bake for 20-22 minutes
- Remove from oven and top with marshmallows, then place until broiler for 2 minutes
- Top with crushed graham cracker and enjoy!

Ingredients and Substitutions for S’mores Baked Oats
Oats: If you want to make this gluten-free, then substitute regular oats for certified gluten-free ones. My favorites are Quaker or Bob’s Red Mill.
Chocolate: I like to use Lily’s baking chocolate chips because they melt well and they’re lower in sugar. If you want to make this recipe dairy-free, then simply use your favorite dairy-free chocolate and dairy-free milk.
Egg: In this recipe, I use a flax egg; however, you can substitute that for a 1 regular egg. The recipe will work just the same!
