Everyone’s favorite campfire treat in cookie form! With an easy option to make gluten-free.

Ingredients

  • 1/2 cup unsalted butter, softened to room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 1/2 cups all-purpose flour *
  • 3/4 cup semisweet chocolate chips
  • 4 sheets graham crackers, crushed *
  • 1/2 cup mini marshmallows
  • flaky sea salt

Instructions

  1. Preheat oven to 375 degrees and line baking sheets with parchment paper
  2. Using a stand mixer or a hand mixer cream butter, white sugar and brown sugar
  3. Beat in the egg and vanilla extract
  4. In a separate bowl sift or mix together flour, baking soda, baking powder and salt
  5. Beat flour mixture into wet mixture, 1/2 cup at a time
  6. Stir in chocolate chips and graham cracker pieces
  7. Form into 22-24 balls, folding 1-2 marshmallows in the center and covering almost completely with dough
  8. Place on baking sheet at least 2 inches apart
  9. Bake for 8-10 minutes. Don’t over-bake, you want these to be chewy! Transfer to a cooling rack and finish with a sprinkle of sea salt
