There are few more comforting, nostalgic flavor combinations than that of S’MORES. Just the thought of roasted marshmallows paired with melted chocolate + the crunch of graham crackers can transport you right back to being wrapped up in a blanket, sitting around a campfire. I’m not very well-versed in camping, but I can remember that much 😉
These cookies are so decadent, soft, chewy and easily made gluten-free! Here’s how to make them.

Ingredients
- 1/2 cup unsalted butter, softened to room temperature
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 1 1/2 cups all-purpose flour *
- 3/4 cup semisweet chocolate chips
- 4 sheets graham crackers, crushed *
- 1/2 cup mini marshmallows
- flaky sea salt
Instructions
- Preheat oven to 375 degrees and line baking sheets with parchment paper
- Using a stand mixer or a hand mixer cream butter, white sugar and brown sugar
- Beat in the egg and vanilla extract
- In a separate bowl sift or mix together flour, baking soda, baking powder and salt
- Beat flour mixture into wet mixture, 1/2 cup at a time
- Stir in chocolate chips and graham cracker pieces
- Form into 22-24 balls, folding 1-2 marshmallows in the center and covering almost completely with dough
- Place on baking sheet at least 2 inches apart
- Bake for 8-10 minutes. Don’t over-bake, you want these to be chewy! Transfer to a cooling rack and finish with a sprinkle of sea salt

To make these cookies gluten-free:
- Be sure to use a one-to-one gluten-free flour replacement. My favorites are Bob’s Red Mill 1:1 Gluten-Free Baking Flour and King Arthur Measure For Measure
- The brand of gluten-free graham crackers I like is Pamela’s (available on Amazon)
Other ingredient substitutions and notes:
- I have not tried using any other flours, so cannot speak to them working well or not. Almond flour and oat flour may work, but the measurements may vary
- I would *not* suggest making these cookies using coconut flour
- To make these lower in sugar you could use monk fruit sweetener instead of granulated sugar, and/or coconut sugar instead of brown sugar
- Instead of butter you could use coconut oil
- Use any of your favorite chocolate chips – milk chocolate, dark chocolate, etc. Some healthier options I love (dairy-free, low sugar) are Hu Kitchen gems (code GRACIE for free shipping) and Lily’s Chocolate.
