These Rice Krispie Cookies with Chocolate Chips are the combo I didn’t know I needed. They’re the perfect balance of ooey-gooey and crunchy.

Ingredients

  • 1/2 cup unsalted butter, softened to room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3/4 cup Rice Krispies cereal
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 375 degrees and line baking sheets with parchment paper
  2. Using a stand mixer or a hand mixer cream butter for 1 minute, then add the sugars and cream for another 2-3 minutes
  3. Beat in the egg and vanilla extract until well combined
  4. In a separate bowl sift or mix together flour, baking soda, baking powder and salt
  5. Beat flour mixture into wet mixture, 1/2 cup at a time
  6. Fold in Rice Krispies and chocolate chips
  7. Form dough into 18-20 balls and place on baking sheet at least 2 inches apart
  8. Bake for 8-9 minutes. Let cool on pan for just 1-2 minutes so they don’t continue cooking and then transfer to a cooling rack
