Who knew Rice Krispies would be a cookie’s best friend? But adding in this fan-favorite cereal is a real winner. My recipe has all the goodness of ooey gooey chocolate chip cookies plus the added subtle crunch of Rice Krispies.
Now, these cookies are *super* simple to make. In fact, they come to gather in under a half an hour! The simplicity also means they’re a great recipe to make with kids for a fun afternoon activity. Ingredients
- 1/2 cup unsalted butter, softened to room temperature
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 3/4 cup Rice Krispies cereal
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 375 degrees and line baking sheets with parchment paper
- Using a stand mixer or a hand mixer cream butter for 1 minute, then add the sugars and cream for another 2-3 minutes
- Beat in the egg and vanilla extract until well combined
- In a separate bowl sift or mix together flour, baking soda, baking powder and salt
- Beat flour mixture into wet mixture, 1/2 cup at a time
- Fold in Rice Krispies and chocolate chips
- Form dough into 18-20 balls and place on baking sheet at least 2 inches apart
- Bake for 8-9 minutes. Let cool on pan for just 1-2 minutes so they don’t continue cooking and then transfer to a cooling rack

Ingredients and Substitutions for Rice Krispie Cookies with Chocolate Chips
Now, these are the doughy, chewy type of chocolate chip cookies. If you like them crunchy, then you can bake an extra 2+ minutes.
So, the base of this recipe is a classic chocolate chip cookie. If classic is what you’re looking for, then you can simply leave out the Rice Krispies!

What cereal should I use?
In this case, I like using good old fashioned Rice Krispies, but for a healthier option you could opt for these organic sprouted brown rice crisps.
