Red velvet cake, but make it a Gluten-Free Red Velvet Cookie Sandwich with Cream Cheese Filling. You can’t have red velvet without a decadent cream cheese frosting, and my homemade version is so simple and easy to make.

Cookie Ingredients

  • 1 egg
  • 1/4 cup + 1 tablespoon maple syrup
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon red food coloring
  • 2 cups finely ground blanched almond flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Filling Ingredients

  • 4 oz cream cheese, softened to room temperature
  • 2 tablespoons unsalted butter, softened to room temperature
  • 3/4 cup confectioners sugar

Instructions

To make cookies:

  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper
  2. Whisk together egg, maple syrup, butter, vanilla extract and red food coloring drops
  3. In a separate large bowl combine the almond flour, cocoa powder, salt and baking soda. Add wet ingredients to dry ingredients and combine
  4. Refrigerate dough for 20-30 minutes (so it’s easier to work with)
  5. Roll dough into 16 balls and flatten slightly. Place on baking sheet
  6. Bake for 8-9 minutes. Transfer to cooling rack and let cool completely

To make frosting filling:

  1. Use a hand mixer to beat the cream cheese and butter until fully combined
  2. Add powdered sugar 1/4 cup at a time, and continue beating until smooth and creamy

To assemble cookie sandwiches:

  1. Spread 1-2 tablespoons filling on a cooled cookie, then top with another cookie
  2. Enjoy immediately and keep stored in the refrigerator

You can easily double or triple this recipe! The cookies are very rich, so unless making for a larger group you may not need as many as you think (;
