So, you’re craving a Reese’s, but you want to get your protein in. Enter: Protein Peanut Butter Cups. These are a healthy-ish twist on the fan-favorite combination. I mean, is there anything better than PB + chocolate?!
Ever since creating this recipe, these PB cups have been a staple. I love to make a batch and then store in the fridge or freezer to grab as a quick sweet treat. They also make a great high protein snack! And they’re low in sugar as well as gluten-free. In total, this recipe takes just 30 minutes and you only need 5 ingredients! Could it get any better?!

Ingredients
- 1/3 cup + 1 tablespoon peanut butter, melted
- 1/4 cup vanilla protein powder
- 1 tablespoon honey
- 1 1/2 cups lower sugar chocolate chips
- 2 tablespoons coconut oil
Instructions
- Line a muffin pan with baking cups and spray with nonstick spray*
- In a bowl mix together peanut butter, protein powder and honey
- Add chocolate chips and coconut oil to a microwave safe bowl and microwave for 90 seconds, stirring every 30 seconds, until fully melted **
- Spoon a layer of melted chocolate into each baking up, then about 2 teaspoons of the peanut butter mixture, formed into small discs
- Top with more melted chocolate so that the peanut butter is fully covered
- Place muffin pan in the freezer for at least 20 for chocolate to harden
- Keep stored in an airtight container for up to 3 days, or for longer in the refrigerator or freezer

** You could also melt in a small stovetop pot if you don’t want to use the microwave

Ingredients and Substitutions for Protein Peanut Butter Cups
What muffin pan should I use?
I love using a silicone muffin pan because it makes it very easy to remove the peanut butter cups. You could also use silicone baking cups. I recommend still using nonstick spray, but you can omit muffin liners.
If you want to make mini peanut butter cups, here is a silicone mini muffin pan.
You could use any mini or regular size muffin pan, just note it will change the number of peanut butter cups this recipe yields (12 peanut butter cups using a regular sized muffin pan, 24 if using a mini muffin pan).
What chocolate chips should I use?
My favorite chocolate chips for this recipe are Lily’s and Hu, as they are both low in sugar. But you can use any chocolate chips you like!
What protein powder should I use?
My favorite protein powder to use in recipes is Iconic grass-fed vanilla protein powder. It blends will with the peanut butter and has a mild flavor. You can use code hungryblonde for a discount.
Can I use a different nut butter?
Yes, any nut butter should work great!
Can I use a different sweetener?
Maple syrup would work great in place of honey. You could also use regular sugar or a monk fruit sweetener. You can omit sweetener all together as well, but note that it will make for a less sweet, typical peanut butter cup taste.
