Grain-Free Peanut Butter Chocolate Chip Banana Bread

This Peanut Butter Chocolate Chip Banana Bread is so dense, the perfect amount of sweetness, and includes everyone’s favorite flavor combo – chocolate + peanut butter! It is also grain-free and gluten-free.

Ingredients

  • 3 medium ripe bananas, mashed
  • 1/2 cup creamy peanut butter
  • 1/4 cup coconut sugar (or brown sugar)
  • 2 eggs
  • 1 tablespoon coconut oil, melted
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup coconut flour
  • 1/4 cup almond flour
  • 1 tsp baking powder
  • pinch of salt
  • 3/4 cup dark chocolate chips or chunks
  • optional: more chocolate for topping

Instructions

  1. Preheat oven to 350 degrees
  2. In a large mixing bowl whisk together mashed banana, peanut butter, coconut oil, eggs, sugar & vanilla
  3. In a separate bowl combine coconut flour, almond flour, baking powder & salt
  4. Add the dry ingredients to the wet ingredients and mix just until combined, then fold in the chocolate chips. Option to top with more chocolate
  5. Transfer batter into a greased 8½x4½ inch loaf pan and bake for 40-45 minutes, or just until the edges start turning golden
  6. Let cool for at least 30 minutes before cutting
