Ingredients
- 3 medium ripe bananas, mashed
- 1/2 cup creamy peanut butter
- 1/4 cup coconut sugar (or brown sugar)
- 2 eggs
- 1 tablespoon coconut oil, melted
- 1/2 teaspoon pure vanilla extract
- 1/2 cup coconut flour
- 1/4 cup almond flour
- 1 tsp baking powder
- pinch of salt
- 3/4 cup dark chocolate chips or chunks
- optional: more chocolate for topping
Instructions
- Preheat oven to 350 degrees
- In a large mixing bowl whisk together mashed banana, peanut butter, coconut oil, eggs, sugar & vanilla
- In a separate bowl combine coconut flour, almond flour, baking powder & salt
- Add the dry ingredients to the wet ingredients and mix just until combined, then fold in the chocolate chips. Option to top with more chocolate
- Transfer batter into a greased 8½x4½ inch loaf pan and bake for 40-45 minutes, or just until the edges start turning golden
- Let cool for at least 30 minutes before cutting

Can I use any other types of flour?
I would recommend sticking to the flours & measurements as listed. Grain-free baking can be a bit of a science, so different ratios or flours may not work well.
When making this recipe, I recommend using Bob’s Red Mill coconut flour and Bob’s Red Mill finely ground almond flour.
Can I use a different sweetener?
I like using coconut sugar because it has a delicious warming flavor with a lower glycemic index. Brown sugar would be the next best option, or maple syrup would work just fine in this recipe.
Do I have to use coconut oil?
Instead of coconut oil you could use melted butter or a melted dairy-free butter. Use the same measurements.
Can this recipe be made egg-free?
I have not tried this recipe without eggs, however you could try using 2 “flax eggs,” which is a combination of ground flax meal and water. Here is a tutorial how to make flax eggs.
Do I have to use peanut butter?
I love using Skippy Natural Peanut Butter, but any other nut butter would work! Almond butter would be delicious, and sunflower seed butter is a good nut-free option.
To make as muffins:
To make this Banana Bread in muffin form, simply bake them in lined and/or greased muffin pan for 22-25 minutes (or until a toothpick comes out clean).

vegetable oil or coconut oil 🙂 I haven’t tried coconut sugar but it should work.
