Delicious and easy copycat Chick-fil-A chicken nuggets that are grain-free, gluten-free, Paleo & Keto-friendly.

Ingredients

  • 2 lbs organic chicken breast
  • 3 eggs, beaten
  • 3/4 cup coconut flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 12 teaspoons nutritional yeast 
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup (or more, as needed) ghee or oil

Instructions

  1. Rinse and pat dry the chicken. Cut into 2 inch pieces
  2. Beat the eggs in a shallow bowl and set aside
  3. In another large shallow bowl, combine the coconut flour and seasonings
  4. Dip the chicken pieces first in the egg, then into the breading mixture and coat well

To cook stovetop:

  1. Heat a large pan to medium heat and add ghee or oil
  2. Cook the chicken nuggets 3-4 minutes per side until they’re golden brown. Add more ghee/coconut oil as needed – you want the nuggets to get crispy on the outside

To bake:

  1. Preheat oven to 425 degrees
  2. Spread nuggets evenly on a parchment-lined baking sheet and drizzle or spray with olive oil
  3. Bake for 20-25 minutes, flipping midway
