I’m a huge fan of french onion soup and I’m a huge fan of pasta. I mean, I have a whole list of easy pasta recipes (that I make on the weekly!). Therefore, it only made sense to bring the two together and make one of the heartiest, most delicious pasta dishes! Now for the best part: You only need one pot and less than one hour to make!
Don’t get me wrong, I love light and fresh meals. However, sometimes you just want a cozy meal that feels like a warm hug. If that’s the mood you’re in, then this is the dish for you. And yes, caramelized onions are definitely a labor of love, but they are so very worth it. Especially in this dish!

Ingredients
- 1/4 cup olive oil
- 3 large yellow onions, thinly sliced
- 1/2 teaspoon kosher salt
- 4 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1/2 cup dry white wine
- 3 tablespoons sherry vinegar
- 2 tablespoons all-purpose flour
- 4 cups beef bone broth or stock
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1 pound uncooked pasta
- 1/3 cup heavy cream
- 1/2 cup grated or shredded parmesan cheese* (+ more for topping)
- chopped fresh parsley for garnish
Instructions
- Heat a large dutch oven or pot to medium heat and add olive oil, onion and 1/2 teaspoon salt
- Cook for 5 minutes, stirring frequently, then reduce heat to medium low. Cook for 45-60 more minutes until onions are caramelized. Stir frequently to keep them from sticking to the bottom of the pot
- Add garlic and thyme and let cook for 1 minute, then add wine and sherry vinegar to deglaze and scrape bottom of the pot
- Stir in the flour for 1 minute
- To the pot stir in broth, Worcestershire sauce, salt, pepper and pasta. Bring to a boil
- Cover, reduce heat to simmer and let cook for 15-20 minutes, until the liquid is absorbed and pasta is cooked to al dente
- Turn off heat and stir in heavy cream and cheese
- Serve topped with a sprinkle of parmesan and fresh parsley

How to make gluten-free:
If you want to make this dish gluten-free, just make two easy swaps. First, use gluten-free flour. Some of my favorites are Bob’s Red Mill 1:1 Gluten-Free Baking Flour and King Arthur Measure For Measure. Second, you will need to swap the pasta for gluten-free pasta.
What pasta should I use?
Generally, I love using bean based pasta as they are gluten-free and include extra fiber and protein. If you are looking for a brand, then I recommend Banza and Barilla both of which make great chickpea pastas. In addition, I love Explore Cuisine’s Red Lentil Pasta. You could also use any of your favorite gluten-free (corn, brown rice, etc.) pastas. If you’re looking for a low-carb option, then I recommend Lupin bean pasta.
How to make dairy-free:
If you’re looking to make this recipe dairy-free, then you’ll need to swap out the cheese and heavy cream for your favorite dairy-free options. Some of my favorite dairy-free cheeses are VioLife and Miyokos Creamery. A good alternative for the heavy cream would be coconut cream or Silk heavy cream.
