This Gluten-Free Monster Cookie Bread has all the flavors of the cookie favorite, but in a soft & dense cake bread form! Full of peanut butter flavor, oats, M&Ms and chocolate chips. Keep scrolling for the recipe.
A Monster Cookie, if you aren’t familiar, is a cookie that doesn’t hold back. In fact, they are one of the most loaded cookies out there. A traditional Monster Cookie has peanut butter, chocolate, M&M’s, and oats. The addition of the oats lends this cookie a denser, chewier texture. My Monster Cookie Bread keeps the integrity of the original, but in the form of soft and dense cake bread.
In case you missed it, here at HB we’re taking a little break from Christmas Cookies and all about the Christmas Cookie Breads. So far I’ve shared my Sugar Cookie Bread, Candy Cane Bread and Oatmeal Cookie Bread. ALL gluten-free!
With each one I think yep – this is my favorite – and as expected that happened with this Gluten-Free Monster Cookie Bread too.

Notes
* Be sure to use a 1:1 gluten-free flour in this recipe. I used this one from Pilsbury, which I found at my local grocery store and I loved how it worked in this recipe. My other favorite is by Bob’s Red Mill and King Arthur.
If you are not gluten-free, simply use regular all-purpose flour, same measurements.

What flour should I use?
Be sure to use a 1:1 gluten-free flour in this recipe. In this case, I used this one from Pilsbury, which I found at my local grocery store and I loved how it worked in this recipe. However, if you can’t find that, my other favorites are Bob’s Red Mill and King Arthur.
In addition, please note that you can’t use just any gluten-free flour because some of them require different measurements, etc. so be sure to opt for one that clearly says it’s a 1:1 swap for regular flour.
Moreover, if you are not gluten-free, simply use regular all-purpose flour, same measurements.
Using all-purpose flour may cut down baking time. In that case, check it around 40-45 minutes, it’s done baking when a toothpick comes out clean.
As always, if you make this Gluten-Free Monster Cookie Bread or any of my other recipes I’d love to know how they turned out. Please leave a review, and be sure to tag me on Instagram @Hungry.Blonde! xoxo GG
