So, I figured: Why not turn one of the best ice cream flavors into an easy-to-make, delicious, and gluten-free cookie? And so, the recipe for Mint Chocolate Chip cookies was born. These cookies taste exactly like the ice cream. The center is pillowy-soft, but the outside still has a nice, light crunch to it. You’ll hardly be able to wait for these Mint Chocolate Chip cookies to cool before you begin devouring the pan! Be warned: It’s incredibly hard to have just one. Find the recipe below!

Ingredients
- 1/2 cup unsalted butter, softened to room temperature
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon mint extract
- 2–3 drops natural green food coloring (optional)
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 3/4 cup semisweet chocolate chips
Instructions
- Preheat oven to 375 degrees and line baking sheets with parchment paper
- Using a stand mixer or a hand mixer cream butter and sugar
- Beat in the egg, then mint extract, then food coloring until well combined
- In a separate bowl sift or mix together flour, baking soda, baking powder and salt
- Beat flour mixture into wet mixture, 1/2 cup at a time
- Stir in chocolate chips
- Form dough into 22-24 balls and place on baking sheet at least 2 inches apart
- Bake for 8-10 minutes. Let cool on pan for 5 minutes before transferring to cooling rack

I was a little confused because in the ingredient list it just says baking soda but in the instructions it says add baking soda and powder. I omitted the powder but maybe I shouldn’t have? they came out thin and crispy but still delicious.

I’ve made these so many times with regular flour and they come out great! But the first time with 1:1 GF flour they spread like crazy! Any advice on how to fix the dough?

oh that’s strange, I haven’t had that issue! You could try adding a bit extra baking powder, like an extra 1/4 tsp?
