Soft and fluffy Low Carb Sugar Cookies ~ so tasty and easy to make with just a few simple ingredients! Keto-friendly.

Ingredients

  • 2 cups almond flour (I use Bob’s Red Mill)
  • 1 tsp baking soda
  • 1 egg
  • 1/4 cup monk fruit sweetener
  • 2 tbsp melted butter
  • 1 tsp pure vanilla extract
  • optional chocolate drizzle topping: 1 tsp coconut oil + 3 tbsp sugar-free chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper
  2. In a bowl whisk together melted butter, egg, monk fruit sweetener & vanilla
  3. In a separate bowl combine the almond flour and baking soda
  4. Add wet ingredients to dry ingredients and combine well
  5. Roll about 2 tbsp of dough into balls, place on baking sheet & press down a bit
  6. Bake for 8-10 minutes then immediately place on cooling rack
  7. If adding chocolate drizzle: heat coconut oil and chocolate chips in microwave or small stovetop pot until fully combined, drizzle over cooled cookies

Notes

I recommend storing these in the refrigerator in an airtight container, as they can get soggy after a day or so
