Here me out. Low Carb Sugar Cookies but make them…sugar-free?! Trust me on this one.
That’s right – these Low Carb Sugar Cookies are actually free of sugar! Instead they are sweetened using monk fruit sweetener, which I’ve recently loved swapping out regular sugar and baking with. These cookies are also grain-free, gluten-free, and easy to make Paleo.

Ingredients
- 2 cups almond flour (I use Bob’s Red Mill)
- 1 tsp baking soda
- 1 egg
- 1/4 cup monk fruit sweetener
- 2 tbsp melted butter
- 1 tsp pure vanilla extract
- optional chocolate drizzle topping: 1 tsp coconut oil + 3 tbsp sugar-free chocolate chips
Instructions
- Preheat oven to 350 degrees. Line baking sheets with parchment paper
- In a bowl whisk together melted butter, egg, monk fruit sweetener & vanilla
- In a separate bowl combine the almond flour and baking soda
- Add wet ingredients to dry ingredients and combine well
- Roll about 2 tbsp of dough into balls, place on baking sheet & press down a bit
- Bake for 8-10 minutes then immediately place on cooling rack
- If adding chocolate drizzle: heat coconut oil and chocolate chips in microwave or small stovetop pot until fully combined, drizzle over cooled cookies
Notes
I recommend storing these in the refrigerator in an airtight container, as they can get soggy after a day or so

Can I use a different type of flour?
I have not tried this recipe using a flour other than almond flour. All-purpose flour or oat flour may work, but I highly recommend NOT using coconut flour as it has a very different absorption. For best results I suggest sticking to a super fine almond flour like this one.
Can I use a different sweetener?
Yes! If you don’t want to use a monk fruit sweetener, you can sub in the same amount (1/4 cup) of either regular granulated sugar, maple syrup, or honey.

- Use melted coconut oil instead of butter

- Instead of making a chocolate drizzle, you can simply add a square or chunk of your favorite chocolate right when you take the cookies out of the oven

What sprinkles should I use?
Sprinkles are optional, but for the sheer joy they bring, very much recommended 😉 Any sprinkles will work, but if you want a sugar-free/Keto option I love these from The Sprinkle Company.
These cookies are delicious “naked,” but the chocolate makes them a bit more decadent. Sprinkles aren’t necessary either but I’m pretty sure it’s a scientific fact that sprinkles are an instant mood-booster.
