Loaded Chicken Salad Sandwich is going to be your new lunch favorite. Chock full of protein and flavor with *all* the toppings, this sandwich will leave you so satisfied.

Ingredients

Scale
  • 2 cups cooked chicken, chopped or pulled/shredded *
  • 1 stalk celery, chopped
  • 1 green onion, diced
  • 3 tablespoons walnuts, chopped
  • 1/3 cup red grapes, cut in quarters (optional)
  • 1/2 cup mayonnaise
  • 1 teaspoon dijon mustard
  • juice of 1/2 a lemon
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon dried dill OR parsley
  • fresh parsley for topping (optional)

Instructions

  1. In a bowl combine chicken, celery, green onion, walnuts and grapes
  2. To the bowl add mayonnaise, dijon mustard, lemon juice and seasonings and combine  all ingredients well
  3. Let chill in the fridge before serving as a sandwich or salad, topped with fresh herbs
