The key to a truly satisfying sandwich is to load it up with a variety of ingredients. In this recipe, I’m sharing my secret to the best classic chicken salad, and how I assemble it into the most incredible sandwich.
So, one of my biggest cravings during pregnancy has been big, loaded sandwiches. However, unlucky for me, it’s advised to avoid deli meats. Enter: chicken salad, the sandwich protein filling that saved the day and made me not even miss my favorite cold cuts.

Ingredients
- 2 cups cooked chicken, chopped or pulled/shredded *
- 1 stalk celery, chopped
- 1 green onion, diced
- 3 tablespoons walnuts, chopped
- 1/3 cup red grapes, cut in quarters (optional)
- 1/2 cup mayonnaise
- 1 teaspoon dijon mustard
- juice of 1/2 a lemon
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 teaspoon dried dill OR parsley
- fresh parsley for topping (optional)
Instructions
- In a bowl combine chicken, celery, green onion, walnuts and grapes
- To the bowl add mayonnaise, dijon mustard, lemon juice and seasonings and combine all ingredients well
- Let chill in the fridge before serving as a sandwich or salad, topped with fresh herbs
Notes
* I like using rotisserie chicken as a quick hack for juicy, delicious chicken
I omit the grapes when making for the sandwich below

Ingredients and Substitutions for Loaded Chicken Salad Sandwich
Now, the key to this sandwich is the array of different ingredients that all come together to create a fantastic flavor profile. Once you try this, you’re going to be having it on repeat all week long. Of course, this recipe is also completely customizable. You can swap out any and all ingredients for the ones you most want. But here is how I typically build my sandwich.
Sandwich components to go along with the chicken salad:
- 2 slices of your favorite bread, toasted
- a thin layer of store bought pesto on each slice of bread
- 1 slice of cheese (of choice)
- slice of fresh tomato
- slice of red onion
- 1/2 of an avocado, sliced
- 2 pieces crispy bacon
- a few slices of fresh cucumber
- lettuce
Can I use a different type of nuts?
Instead of walnuts, pecans or almonds would be a delicious alternative
What mayonnaise should I use?
In this case, I love using Duke’s Mayonnaise. However, you can use your favorite light mayo or plant-based mayonnaise spread.
Vegetarian option

What bread should I use?
Any bread you like! I love using Dave’s Killer Bread or sourdough bread. You can also use your favorite gluten-free bread or even a wrap would be a delicious option.
