Magic Brownie Bars that are loaded with peanut butter, chocolate, nuts, coconut, and even mini cookies! Keto-friendly, gluten-free and grain-free recipe.

Brownie Ingredients:

  • 1 cup almond flour
  • 3/4 cup monk fruit sweetener
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 2 tablespoons butter, melted
  • 1 tsp vanilla extract
  • 1/4 cup sugar-free chocolate chips

Topping Ingredients:

  • 3 tablespoons creamy peanut butter, melted
  • 1/4 cup sugar-free chocolate chips
  • 3 tablespoons sugar-free butterscotch chips
  • 3 tablespoons sugar-free white chocolate chips
  • 3 tablespoons crushed pecans
  • 1/4 cup shredded unsweetened coconut
  • 1/4 cup HighKey mini chocolate chip cookies (optional)

Instructions

  1. Preheat oven to 350 degrees. Line 8×8 baking pan with parchment paper
  2. In a large bowl combine almond flour, monk fruit sweetener, cocoa powder, baking soda and salt
  3. Then mix in the egg, butter and vanilla. Lastly mix in the chocolate chips
  4. Spread batter into baking pan. Top with melted peanut butter, and use a butter knife to swirl peanut butter into the batter
  5. Top with a layer of more chocolate chips, butterscotch chips, white chocolate chips, nuts and coconut. Press down into batter
  6. Bake for 25-27 minutes. As soon as out of oven, press mini cookies into top of brownies
  7. Let cool for at least 30 minutes before cutting into squares or bars
