Ingredients
- 16oz full fat cottage cheese
- 1 1/2 cup shredded Mexican cheese blend
- 1 tablespoon taco seasoning
- 1–2 tablespoon diced green chiles + more for topping
- diced green onion and/or peppadew peppers for topping
Instructions
- Add the cottage cheese to a blender or food processor and blend on high until smooth
- Transfer cottage cheese to a large pot* along with taco seasoning, cheese & green chiles
- Turn heat to medium and heat for 6-10 minutes, stirring frequently until fully melted and combined
- Add toppings of choice and serve hot with your favorite chips or vegetables

*Instead of heating stovetop, you could place everything in a microwave-safe bowl and microwave for 2-4 minutes, stirring frequently until fully melted and combined

What chips should I use?
So I love HiLo Life chips, because they have delicious flavor and add another great 9-10g protein per serving! However, you can also use any tortilla chips you like. In addition, your favorite vegetables are great for dipping here.
Do I have to make this on the stove?
Nope! If you’d like to skip the stovetop part of this recipe, then you can actually just throw this in the microwave. Simply put your ingredients in a microwave-safe bowl and pop it in for 2-4 minutes, making sure to stir frequently.
Now, I am all for simplicity, which is why I’m letting you in on a little tip. If you want to make this recipe even more simple, then you can omit the peppers and green chilies and have a 3-ingredient recipe!
