Greek Nachos are a unique twist on everyone’s favorite way to enjoy chips. Loaded with flavorful toppings, these make for a delicious appetizer, snack, or even meal. 

Ingredients

  • one 15oz can organic chickpeas, drained & rinsed
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon black pepper
  • 12 ounces of pita chips
  • 1 cup diced cucumber
  • 1/3 cup diced red onion
  • 1 cup grape tomatoes, halved
  • 1/2 cup feta cheese
  • 1/4 cup sliced olives (optional)
  • 1/3 cup tahini
  • juice of 1 large lemon
  • salt & pepper to taste
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Preheat oven to 400 degrees and line a baking sheet with parchment paper
  2. Toss the chickpeas with olive oil and spices. Spread evenly on baking sheet and bake for 20 minutes, tossing midway *
  3. In a small bowl whisk together tahini, lemon, and salt & pepper to taste
  4. On a large serving dish assemble a base of chips then top with the cucumber, onion, tomatoes, feta, olives and crispy chickpeas. Drizzle tahini sauce over top and finish with fresh parsley

Notes

* You could also air fry the chickpeas for 12-15 minutes at 375 degrees

These nachos are best enjoyed immediately, or you can prep the ingredients ahead of time and assemble as you go for a quick snack or meal
