Nachos are without question one of the most fun foods to eat. Crunchy, flavorful, great for sharing, no utensils required, and you can get creative with all sorts of toppings.
And that’s exactly what I did with these GREEK Nachos! They’re loaded with delicious toppings like crispy chickpeas, fresh vegetables, feta cheese and an easy homemade Lemon Tahini Sauce.

Ingredients
- one 15oz can organic chickpeas, drained & rinsed
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/8 teaspoon black pepper
- 12 ounces of pita chips
- 1 cup diced cucumber
- 1/3 cup diced red onion
- 1 cup grape tomatoes, halved
- 1/2 cup feta cheese
- 1/4 cup sliced olives (optional)
- 1/3 cup tahini
- juice of 1 large lemon
- salt & pepper to taste
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Preheat oven to 400 degrees and line a baking sheet with parchment paper
- Toss the chickpeas with olive oil and spices. Spread evenly on baking sheet and bake for 20 minutes, tossing midway *
- In a small bowl whisk together tahini, lemon, and salt & pepper to taste
- On a large serving dish assemble a base of chips then top with the cucumber, onion, tomatoes, feta, olives and crispy chickpeas. Drizzle tahini sauce over top and finish with fresh parsley
Notes
* You could also air fry the chickpeas for 12-15 minutes at 375 degrees
These nachos are best enjoyed immediately, or you can prep the ingredients ahead of time and assemble as you go for a quick snack or meal

What chips should I use?
To really go with the Greek theme I love using pita chips. These thin pita chips are my favorite. If you wanted to use tortilla chips instead, my favorite are from Late July. I also love From The Ground Up Snacks Cauliflower Tortilla Chips, and for a grain-free option Siete Tortilla Chips are delicious.
Instead of roasting the chickpeas…
You can pop them in the air fryer for less cooking time. Toss in olive oil and season as instructions say, but instead of roasting, pop them in the air fryer for 12-15 minutes at 375 degrees (tossing midway).
To add more protein…
Grilled chicken would be a delicious addition to these Greek Nachos.
