If you’re thinking, isn’t Gluten-Free Birthday Cake Bread just…cake? The answer would be, sort of 😉 This Birthday Cake Bread is denser than traditional cake, has a secret ingredient that makes it especially flavorful, and as with all of my dessert breads it is gluten-free!

Ingredients

Bread Ingredients:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon cake batter extract
  • 1/2 cup milk
  • 1 1/3 cup 1:1 gluten-free flour *
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 34 tablespoons rainbow sprinkles

Glaze Ingredients:

  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • more sprinkles for topping

Instructions

  1. Preheat oven to 350 degrees
  2. In a large bowl mix together butter and sugar, then add in egg and cake batter extract. Lastly mix in milk until all wet ingredients fully combined
  3. In a separate bowl mix together flour, baking powder, baking soda and salt
  4. Add dry ingredients to wet ingredients and mix just until combined
  5. Fold in the sprinkles. Don’t over-mix so the sprinkles don’t bleed
  6. Transfer batter to a parchment-lined + greased 8½x4½ inch loaf pan and bake for 45-50 minutes**, or until a toothpick comes out clean
  7. Let cool for at least 60 minutes, the longer the better so it has time to set and not crumble when you slice it
  8. To make the glaze, whisk powdered sugar and milk until a smooth consistency, adding more milk if needed
  9. When completely cooled, pour/spread glaze over the bread, then top with more sprinkles

Notes

* Be sure to use a 1:1 gluten-free flour in this recipe. I used this one from Pilsbury, which I found at my local grocery store and I think works best in this recipe.

If you are not gluten-free, simply use regular all-purpose flour, same measurements.

** Using all-purpose flour may cut down baking time. Check it around 40 minutes, it’s done baking when a toothpick comes out clean
