You know the dessert that comes out around the holidays… usually in those little snack bags? It’s made with a cracker base and *loaded* with chocolatey goodness. Also, it’s completely impossible to stop eating?! I look forward to it every year, but then I thought why limit this dessert to just Christmas? Enter: Gluten-Free Funfetti Crack. It’s the summer-version of a holiday favorite!
If you love the famous “Christmas Crack” treat but didn’t want to wait 7 more months to enjoy it, then this recipe is for you. It’s the favorite EASY recipe but made in a Funfetti version with white chocolate chips and rainbow sprinkles. And we’re using gluten-free crackers!
I love recipes that require few ingredients (some of which you may already have in your pantry!). This recipe takes just six ingredients and very little time. It’s the perfect thing to whip up for a party or put in cookie bags as a gift. If you have kids, then this is great for birthday parties, bake sales, and more!

Ingredients
- 1 bag of Milton’s gluten-free crackers *
- 1 cup brown sugar, packed
- 1 cup (2 sticks) unsalted butter
- 1 teaspoon vanilla extract
- 2 cups white chocolate chips
- 1/3 cup rainbow sprinkles
Instructions
- Preheat oven to 400 degrees
- Line a large baking sheet with parchment paper or aluminum foil**, making sure to cover entire bottom and sides of pan
- Evenly layer crackers across the pan
- Place butter and brown sugar in a large saucepan. Turn to medium heat and stir frequently until the butter melts
- Cook for another 3-5 minutes until mixture comes to a boil, continuing to stir often. Allow to boil for just 30 seconds, then remove from heat
- Pour the caramel mixture over the crackers and spread evenly
- Bake for 5 minutes
- Place white chocolate chips in a microwave safe bowl. Microwave for 120-150 seconds, stirring every 30 seconds, until fully melted
- Pour chocolate over crackers and spread evenly. Immediately top with rainbow sprinkles
- Let cool to room temperature, then place baking sheet in refrigerator to chill for at least 4 hours (ideally overnight)
- Once chilled, peel the parchment paper off bottom of crackers. Use a knife or hands to break into 2-3 inch pieces of candy bark
- Keep stored in an airtight container in the refrigerator for up to a week

Ingredients and Substitutions for Gluten-Free Funfetti Crack
What crackers should I use?
The classic recipe uses saltine crackers, but I used Milton’s gluten-free crispy sea salt crackers and they worked deliciously in this recipe.
Can I use different chocolate?
Of course! If you don’t like white chocolate, then you can use milk chocolate or dark chocolate chips. You can also add any other toppings like crushed nuts, pretzels, etc. Adding different toppings is a great way to make this treat festive for any season!
