Plus, there’s no baking or cooking required. In the end, you’ll have a fudge-y, peanut butter-y treat to satisfy your sweet tooth in a snap.

Ingredients
- 1 cup creamy natural peanut butter
- 1/4 cup coconut oil, melted
- 1/4 cup powdered monk fruit sweetener
- 1 teaspoon vanilla extract (optional)
- 1/3 cup crushed low sugar chocolate
- flaky sea salt topping (optional)
Instructions
- In a large bowl mix together peanut butter, coconut oil, monk fruit sweetener and vanilla. Combine well
- Transfer to a parchment-lined 8×8 baking dish
- Top with crushed chocolate and flaky sea salt
- Freeze for at least 30 minutes. Cut into squares
- Eat frozen and store in freezer

Enjoy straight out of the freezer. Be sure not to leave these out too long at room temperature as they melt quickly

Some notes on this recipe / ingredient substitutions:
- Instead of peanut butter you can use any of your favorite nut butter. In fact, I think almond butter or cashew butter would be delicious!
- Instead of monk fruit sweetener you can use regular granulated sugar, maple syrup or honey. However, that would make this recipe no longer low carb.
- In this case, you can use any of your favorite chocolate chunks or chocolate chips. I used crushed JOJO’s low-sugar peanut butter filled chocolate. Code Gracie10 for a discount! In addition, I love Lily’s low sugar chocolate.

To make powdered monk fruit sweetener:
There are powdered monk fruit sweeteners on the market, but you can also make your own by simply taking regular monk fruit sweetener (I used Monk Fruit In The Raw) and briefly pulsing it in a food processor/blender until it reaches a powdered consistency.
