Being on appetizer duty for Thanksgiving or Friendsgiving can be a blessing or a curse. It’s not easy to find a recipe worthy of kicking off one of the most important meals of the year, but it’s also a great opportunity to wow your guests or friends with something unique they can snack on pre-Turkey. Enter: Roasted Butternut Squash, Prosciutto and Goat Cheese Crisps. So many delicious fall flavors in one (or two ;)) crunchy little bite!

Crunchy crisps topped with goat cheese, roasted butternut squash, prosciutto, pecans and a balsamic glaze. The perfect easy Thanksgiving appetizer!

Ingredients
- 2 cups butternut squash, cubed
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 30 crisps or crackers of choice *
- 8 ounces goat cheese
- 10 slices prosciutto
- 30 pecan halves
- chopped fresh rosemary and/or thyme for garnish
- balsamic glaze for garnish
Instructions
- Preheat oven to 400 degrees
- Toss butternut squash with olive oil, salt & pepper. Spread evenly on baking sheet and bake for 30 minutes, flipping midway. Allow to cool
- Assemble crisps by spreading a layer of goat cheese, then top with small piece prosciutto, 1-2 pieces butternut squash, 1 pecan half
- Once all assembled on serving dish, garnish with balsamic glaze, fresh rosemary, and some freshly cracked black pepper right before serving
Notes
* Any crisps or crackers will work. I prefer using ones with a slightly larger, flat surface. Some that I have made this recipe with are Raincoast Crisps and Milton’s crackers. Bagel crisps or pita chips are a delicious option as well.

How do I make balsamic glaze?
Life hack: I always have pre-made balsamic glaze on hand 😉 I just think it’s so easy for a last minute garnish! But if you want to make your own, here is an easy balsamic glaze recipe.
