Easy Baked Caprese Chicken

It doesn’t get much easier than this Baked Caprese Chicken! All you need is a few ingredients and 30 minutes for this delicious and healthy meal, perfect for a quick weeknight dinner the whole family will love.

Ingredients

  • 1 lb boneless, skinless chicken breasts (I like using thin)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/2 of a beefsteak tomato, sliced
  • 6 slices mozzarella cheese
  • 8 basil leaves, chopped
  • balsamic glaze for topping (optional)

Instructions

  1. Preheat oven to 400 degrees
  2. Place chicken on a baking sheet or 9×13 baking dish. Add oil and seasonings and toss until chicken is coated
  3. Bake in oven for 15-20 minutes, or until internal temperature is 165 degrees
  4. Top each chicken breast with 2 slices of tomato and mozzarella cheese. Bake for 5 more minutes until cheese is melted
  5. Top with fresh basil and a drizzle of balsamic glaze. Serve with your favorite vegetables or pasta
