Ingredients

  • ​1lb organic ground chicken
  • 1/2 cup baby spinach, loosely chopped
  • 1/4 cup cooked broccoli florets, chopped
  • ​1 egg
  • 1 tablespoon pesto
  • 1/4 cup almond flour
  • salt, pepper & garlic pepper to taste

Instructions

​1. Preheat oven to 350 degrees
2. Place all ingredients in a large mixing bowl and mash together well
3. Transfer mixture evenly to a greased 24-count mini muffin pan
4. Bake for 15-20 minutes*

Notes

* I like to use a meat thermometer to make sure reaches 165*, but at 15 minutes ours reached 185*
