As a first-time mom, starting my baby on solid foods was a huge learning curve. It was important yet not-so-easy finding foods that my baby loved, were also packed with nutrients, and a recipe that doesn’t require much time. These Chicken Meatballs are the perfect vehicle for all those vitamin-packed veggies. Why? Well because you can’t even taste them!
You can load these little meatball muffins up with any veggies you want, and the flavor that tends to turn kids off gets masked by the chicken. In addition, they go great with pasta and other sauces, which further cover up any sign of veggies. A win for sure. In this recipe, I use leafy greens and broccoli, but you can use whatever you want. However, I would recommend leafy greens or cooked vegetables so they’re soft enough.

1/2 cup baby spinach, loosely chopped

1/4 cup cooked broccoli florets, chopped

1 tablespoon pesto

Notes on Baby-Friendly Chicken Meatball Muffins
The key to the simplicity of this recipe is using a muffin tin. You don’t even have to worry about rolling out the meatballs. Simply put a spoonful into the mini muffin tin and there you have it. The perfect mini meatball! This is a great mini muffin pan because it’s nonstick, so they pop out simply.
Now, another great thing about this recipe is that it can easily be doubled. Worried you won’t be able to use all the meatballs before they go bad? Well, don’t worry because this recipe freezes super well!
In truth, adults will love this recipe, too. I’m shocked by how much flavor is packed into this little bites. And that’s all thanks to the pesto. It really ups the ante! Of course, if you don’t like the flavor of pesto, it can be omitted and you can add in other spices in its place.
