This 5 Ingredient Creamy Tomato Pasta is the EASIEST weeknight dinner. Plus, it’s ready in 15 minutes, one pot needed, it’s easy to make gluten-free, and you can add protein. 

Ingredients

  •  12oz dry spaghetti *
  • 1 cup marinara sauce (I used Rao’s Homemade)
  • 1/3 cup whole milk ricotta cheese
  • 1/4 cup grated or shredded parmesan cheese
  • salt & pepper to taste
  • fresh basil + more parmesan for garnish

Instructions

  1. Cook pasta as directed to al dente in salted water. Drain but reserve some of the pasta water
  2. Put drained pasta back into pot (or a large skillet) with 1/4 cup of pasta water. Turn to medium heat
  3. To the pot add sauce ,ricotta cheese and parmesan cheese, season with salt & pepper. Combine well until it forms evenly into sauce
  4. Serve topped with fresh basil and another sprinkle of parmesan

Notes

* I love using chickpea pasta for a gluten-free pasta that is higher in protein and fiber
