These are small but mighty—a soft and flakey biscuit filled with creamy brie cheese and tangy cranberry sauce, topped with an herbed butter. Honestly, I could probably eat these for a meal and be happy!

Ingredients
- one 16.3 ounce tube biscuit dough
- one 8 ounce wheel brie cheese
- 1/3 cup cranberry sauce
- 2 tablespoons butter, melted
- 1 teaspoon chopped fresh thyme leaves
- 1 teaspoon chopped fresh rosemary
- 1/4 teaspoon salt
Instructions
- Preheat oven to 375 degrees and line a large baking sheet with parchment paper
- Open biscuit dough, slice each biscuit in half, and pull to spread it out a bit. Place on baking sheet
- To the center of each biscuit half add a 1-inch cube of brie and 1 teaspoon cranberry sauce
- Fold up edges of biscuit and pinch to seal at the top, then place seam side down on baking sheet
- In a small bowl whisk together butter, thyme and rosemary. Brush over each stuffed biscuit
- Bake for 20-22 minutes, until top of stuffed biscuits are golden brown
- Best enjoyed immediately while still warm

What biscuits should I use?
So, Pillsbury Grands are the classic, no-fail biscuits. However, Pillsbury Crescent Rolls could work for this recipe as well.
What cranberry sauce should I use?
If you want to stick to the “semi-homemade” nature of this recipe, then you can use your favorite store bought (canned or jarred) cranberry sauce. In this case, the Whole Foods organic canned cranberry sauce, or this jarred cranberry sauce are both good options. And if you want to make your own, then this is a great cranberry sauce recipe.
