Gluten-free Copycat Starbucks Cranberry Bliss Bars made with healthier ingredients.

Ingredients

Blondies:

  • 1 stick unsalted butter, melted
  • 3/4 cup brown sugar (or coconut sugar)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free flour
  • 1/8 teaspoon salt
  • 1/3 cup dried cranberries

Topping:

  • 4oz cream cheese, softened to room temp
  • 2 tablespoons unsalted butter, softened to room temp
  • 1 cup powdered sugar
  • 1/4 cup white chocolate chips
  • 1/3 cup dried cranberries

Instructions

  1. Preheat oven to 350 degrees and line an 8×8 baking dish with parchment paper + spray with nonstick spray
  2. In a large bowl whisk together butter and sugar, then whisk the egg and vanilla
  3. Add flour and salt and combine well, then fold in the dried cranberries
  4. Transfer batter to baking dish and spread evenly
  5. Bake for 17-19 minutes and let cool completely
  6. To make the frosting, using a stand mixer or hand mixer beat together the cream cheese and butter until well combined, then beat in the powdered sugar 1/4 cup at a time
  7. Melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds, or in a stovetop pot stirring frequently
  8. Once the bars are cooled spread on a layer of the cream cheese frosting, a layer of dried cranberries, then lastly a drizzle of the white chocolate
  9. Let cool again for at least 10 minutes before cutting into 8 triangle pieces
