Cinco de Mayo meets Taco Tuesday is 100% the best thing that has happened to 2020, so we’re celebrating accordingly over here with Copycat Cheesy Gordita Crunch tacos (2 ways!).
You guys. I’m shook. These are so fun to make and even more fun to eat. This copycat recipe is also more nutritious as it’s all wrapped up in Outer Aisle cauliflower sandwich thins (= 1 serving of vegetable per thin).
I wanted to try two different versions – one is more classic with a crunchy taco shell and the other is using plantain chips. I really can’t decide which I loved more.
It’s easy to get your hands on some Outer Aisle sandwich thins by ordering through Amazon or InstaCart. I love using them for tacos but they are also great for sandwiches, pizza, tostadas, etc. But for now – here’s how to make these Copycat Taco Bell Cheesy Gordita Crunch tacos.

Ingredients
- 4 Outer Aisle Gourmet Sandwich Thins
- 4 crunchy corn taco shells OR plantain chips
- 3/4 cup shredded cheddar cheese
- 1 cup cooked, seasoned ground beef (can use your favorite taco seasoning or a combo of chili powder, garlic powder, cumin, paprika, salt)
- 2 tbsp your favorite (spicy) ranch dressing
- 1/4 cup shredded lettuce
- 4 tbsp guacamole
Instructions
- Sprinkle cheese on each Outer Aisle sandwich thin and heat either in a stovetop pan or microwave (you want them to stay soft so they fold better)
- Fold into taco shape and fill with either a crunchy taco shell or 1-2 pieces of plantain chip
- Then fill in layers of ground beef, spicy ranch dressing, shredded lettuce, guacamole & another sprinkle of cheese

Some substitution options for Copycat Cheesy Gordita Crunch:
- Instead of ground beef you could use ground turkey or ground chicken as other meat options
- If you wanted to make these vegetarian, then you could use your favorite beans or meat substitute (I like Impossible Foods)
- Use any other cheese you like! If you wanted to use a vegan cheese, VioLife cheddar shreds are a good option
- This recipe can easily be doubled or tripled if making for a larger group
The flavors + textures in these tacos are the ultimate party in your mouth. They bring me back to going through the Taco Bell drive-thru as a senior in high school when they let us go out to lunch on Fridays (lol). But without the “fast food hangover” afterward 😉 I really can’t wait for you to make them.
