Classic Pumpkin Bread ~ An Easy and Traditional Fall Recipe

A classic, easy pumpkin bread recipes with all of the delicious flavors of fall!

Ingredients

Scale
  • 1 2/3 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil OR butter, melted
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1/2 cup water
  • mix-ins: crushed nuts and/or chocolate chips (optional)
  • cream cheese frosting for topping (optional) *

Instructions

  1. Preheat oven to 350 degrees
  2. In a large bowl combine flour, sugar, baking soda, baking powder, pumpkin pie spice and salt
  3. In a separate bowl whisk together eggs, maple syrup, coconut oil, pumpkin, vanilla and water
  4. Add wet ingredients to dry ingredients and combine well. Fold in any nuts or chocolate chips, if using
  5. Pour batter into greased loaf pan, top with crushed walnuts, and bake for 65-70 minutes, when a toothpick comes out clean
  6. Allow to cool in pan for 10 minutes, then transfer to cooling rack for another 30+ minutes before slicing
