These Banana Nut Graham Cracker Muffins are a unique and delicious twist on classic muffins, using graham cracker crumbs as the “flour.” The flavor combination is absolutely delicious, kids and adults alike will love them.

Ingredients

  • 16 sheets graham crackers, finely crushed
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 egg
  • 1 cup milk (I used almond milk)
  • 2 tablespoons honey
  • 2 fully ripe bananas, mashed
  • 1/4 cup chopped walnuts

Instructions

  1. Preheat oven to 400 degrees. Line a muffin pan with baking cups
  2. In a large bowl combine graham cracker crumbs, sugar and baking powder
  3. Then mix in egg, milk, honey and mashed banana and combine well
  4. Spoon batter evenly into muffin baking cups and top each one with walnuts
  5. Bake for 15 to 17 minutes, or until toothpick inserted in centers comes out clean. Cool in pan 5 minutes then remove to cool longer on wire rack
