Every so often I get a box of graham crackers for a particular recipe. This past week it was to remake my (oh so tasty) Salted S’mores Cookies. Usually the box then finds its way to the back of my pantry, where I forget about it until the crackers go stale.
But this time, literally as I was placing the box in my pantry, I noticed a recipe on the back that peaked my interest. I’m not usually one to make back-of-the-box recipes, but I gave this one a try. I’m so glad I did. The result was some of the most delicious muffins I’ve ever made, a recipe that I will certainly be making again!

Ingredients
- 16 sheets graham crackers, finely crushed
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1 egg
- 1 cup milk (I used almond milk)
- 2 tablespoons honey
- 2 fully ripe bananas, mashed
- 1/4 cup chopped walnuts
Instructions
- Preheat oven to 400 degrees. Line a muffin pan with baking cups
- In a large bowl combine graham cracker crumbs, sugar and baking powder
- Then mix in egg, milk, honey and mashed banana and combine well
- Spoon batter evenly into muffin baking cups and top each one with walnuts
- Bake for 15 to 17 minutes, or until toothpick inserted in centers comes out clean. Cool in pan 5 minutes then remove to cool longer on wire rack

Why I love these Graham Cracker Muffins:
These are truly some of the softest muffins I’ve ever made. The banana + graham cracker flavors go so well together, with the perfect crunch from walnuts to bring it all together. They have a dense, cake-y texture that makes it feel like you’re having dessert for breakfast. Honestly, that’s the goal, right?

Yes! Simply use gluten-free graham crackers.
How to I make graham cracker crumbs?
Graham crackers crush easily, so you could place them in a ziplock and pound into crumbs. However I find it easy to place them in a food processor or blender, pulse for a few seconds until they reach an even crumb consistency.
