If you’re a fan of thin or crispy cookies, you should probably just leave right now. Was that too harsh…? Sorry, I think I lost my senses a bit because of how much I’m swooning over these Fluffy Almond Flour Snickerdoodles.
When it comes to grain-free baking, almond flour reigns supreme if you ask me. It’s the most forgiving texture-wise (as opposed to baking with coconut flour, which is tricky af), plus it has such a unique warm, nutty flavor.
Even though there’s only 2 tablespoons of butter in these Almond Flour Snickerdoodles, they also have such a delicious buttery flavor to them. And, if you couldn’t tell, the fluff factor is strong.
Here’s how to make them!
Fluffy Almond Flour Snickerdoodles
Ingredients:
- 2 cups almond flour (I use Bob’s Red Mill)
- 1 tsp baking soda
- 1 egg
- 1/4 cup pure maple syrup
- 2 tbsp unsalted butter, melted
- 1 tsp pure vanilla extract
- 2 tbsp granulated sugar
- 2 tsp ground cinnamon

Directions:
- Preheat oven to 350 degrees. Line baking sheet(s) with parchment paper.
- In a large bowl whisk together the egg, maple syrup, butter & vanilla.
- In a separate bowl combine the almond flour and baking soda.
- Add wet ingredients to dry ingredients and combine well.
- In a small bowl combine sugar + cinnamon for the topping.
- Roll about 2 tbsp of dough into balls, place on baking sheet & press down a bit. Top with cinnamon sugar mixture.
- Bake for 9-10 minutes then immediately place on cooling rack. Yields 12-14 cookies.
CINNAMON SUGAR GLAZE
If you want to take these cookies up a notch, nix the cinnamon sugar topping and instead add this glaze right when the cookies get out of the oven: 1/2 cup powdered sugar + 2 tsp cinnamon + 2 tbsp milk, whisked together
