With just a few ingredients and no baking required, these Healthy Butter Cookie Dough Balls seem almost too good to be true. They’re fudge-y and just the right amount of sweetness for a healthy dessert or afternoon snack. .

Ingredients
- 2/3 cup creamy cashew butter, softened or melted
- 1/2 cup coconut flour
- 1/4 cup + 1 tbsp honey
- 1/3 cup lower sugar chocolate chips
Instructions
- In a large bowl whisk together cashew butter and honey
- Mix in the coconut flour until combined, then the chocolate chips
- Roll into 1-2 inch balls and place on parchment-lined plate or baking sheet
- Refrigerate for at least 30 minutes
- Can be stored in fridge for about a week or in the freezer for longer. Makes 12-16 balls

What can I use instead of coconut flour?
I find coconut flour lends to the best dough-like texture, but some other options are:
- sub coconut flour for plant-based vanilla protein powder
- do a combo of half coconut flour, half vanilla collagen powder
- use almond flour instead of coconut flour (although I find this makes the balls not hold together as well)
Can I use a different nut butter?
Yes! Just about any nut butter works in this recipe. I personally love using peanut butter
Can these cookie dough balls be made vegan?
Yes, simple swap in maple syrup instead of honey, and be sure to use dairy-free chocolate chips
Can I add other mix-ins?
Yes, these cookie dough balls are delicious with added chopped nuts, shredded coconut, sprinkles, or any other candies. I also love making them even more decadent by rolling them in melted chocolate and allow to harden.
