Cauliflower… who knew it would become the most versatile vegetable out there? It can be “rice”! It can be “mashed potatoes”! Or it can be gnocchi! Of course, the cauliflower version will never be *quite* the same as the original. However, if you prepare it right, it’s a great lower carb alternative. Plus, it’s delicious. This Air Fried Parmesan Cauliflower Gnocchi showcases just how good cauliflower gnocchi can be — it’s loaded with flavor and can be the a great appetizer or a smaller main course!
If you’ve ever tried preparing cauliflower gnocchi as directed (by boiling), I am deeply sorry you had to experience that disappointment. The result is gummy and a bit slimy, and no one should ever have to endure that. So for future reference, the best ways to prepare cauliflower gnocchi are a) stovetop – like in this recipe for Caprese Gnocchi – or b) in the air fryer.

Ingredients
- one 12oz package of frozen cauliflower gnocchi
- 1–2 tablespoons olive oil
- 2–3 tablespoons grated parmesan cheese
- 1/4 teaspoon garlic powder
- salt and pepper
- marinara sauce for dipping
Instructions
- Allow gnocchi to thaw by either placing at room temperature, or defrosting in the microwave
- Place in large bowl and drizzle with olive oil
- Add parmesan cheese, garlic powder, salt & pepper and toss until gnocchi is coated
- Transfer to air fryer and air fry at 450 degrees for 10-15 minutes,* tossing midway and breaking up the gnocchi so it doesn’t stick together
- Serve with marinara sauce

* Keep an eye on them as air fryers tend to vary, you want them brown and crispy on the outside

What kind of gnocchi should I use?
I like to use Hungryroot’s cauliflower gnocchi (code hungryblonde for 30% off first two boxes) or Trader Joe’s cauliflower gnocchi.
Now, I have not tried this recipe with regular (potato) gnocchi, but that should work as well. However, the air fry time may differ, so just keep an eye on it.
