What I Eat In A Day: I’m bringing it back, baby. I wasn’t sure if you guys were into these posts, but recently I’ve gotten a handful of requests for more of a peek into my daily eats! So I’ll be making these WIDIAD posts a more frequent thing, cool?

Yesterday was particularly photo-worthy because I worked from home all day…and, well, I knew I was going to do this post 😉 As always I started my day with a big cup of coffee, but this was an extra special cup because it included this Pumpkin Spice Almond Dream. I found it the other day at my local Whole Foods Market, and it is SO good! Healthier Pumpkin Spice Latte, anyone?
Breakfast
About an hour later I had a nice big piece of Peanut Butter Apple Bake (you can find the recipe for it here). I’ve been more of a savory breakfast person these days, but I haven’t been able to keep my hands off this since I made it on Monday. It’s seriously SO delicious and perfect for fall!
Lunch
For lunch I made thee best fall-inspired chicken salad, if I do say so. It was so easy to make! I diced up 2 organic chicken breasts (that I had roasted the night before) and added 1/2 cup halved organic red grapes, 1/4 cup crushed pecans, 2 tbsp chopped green onion, 1/4 cup Primal Kitchen mayonnaise, and salt & pepper to taste. I made little “wraps” of it with some butter lettuce leaves.
Snack
My go-to afternoon snack lately has been these Raw Rev Glo bars. OMG you guys, they’re so tasty! All of the flavors are amazing, but my favorites are cookie dough and this peanut butter dark chocolate & sea salt. It’s almost hard to believe that they’re gluten-free and vegan.
Dinner
And that brings us to dinner, where I was quite starving after my evening Flywheel class. It’s no secret that cauliflower rice power bowls are my JAM. I loaded this (also fall-inspired) one with roasted broccoli, butternut squash, broiled garlicky MSC Fresh Icelandic Cod, 1/2 of an avocado, some sprouts, and a sprinkle of raw pumpkin seeds & green onion.
Dessert
Last but not least, your girl can’t go a day without dessert 😉 I polished off the last 2 pieces of my Dark Chocolate Covered Coconut Bars, which I’ll for sure be making another batch of again soon…
