Something I’ve always wanted to do with Hungry Blonde (but have failed thus far) is share with you what my everyday, behind-the-scenes eats look like. Because let’s be real – the chocolatey, cheesy, fried goodness I often share on the HB Instagram isn’t what I’m eating on a daily basis.
As much as I love those foods, I always want Hungry Blonde to be REAL, and to show how I balance (mostly) healthy eats with NYC indulgences.
So let’s do a little What I Eat In A Day action, shall we?
Today was an interesting day because I’ve been super busy getting my life in order before some upcoming trips. And since I’ll be away for 2+ weeks, I haven’t been stocking up on groceries, so I’ve had to work with what little I’ve had left in the fridge.
For breakfast I had an egg scramble made with some frozen veggies, 2 eggs, and Laughing Cow cheese, and a light English Muffin with almond butter. Oh, and a big ass jar of iced coffee with almond milk, of course.
It was the perfect amount of food to get me through a morning of work and some errands. By the time I got home around 2pm I was starving, so I threw together literally whatever I could find in the kitchen. The result turned out to be quite the balanced meal – shrimp, asparagus (topping with Trader Joe’s Goddess Dressing) and some roasted potatoes.
A few hours later I needed a snack…and by snack I mean something sweet and carb-y…so I had a Dough Bar Doughnut that I had stored in the freezer.
And that brings us to dinner, which I actually grabbed earlier in the day from Juice Generation. I knew I’d need some greens so I picked up their Kale Avocado Salad, followed up by a giant Lenny & Larry’s Oatmeal Raisin cookie.
Kale and cookies – quite possibly the very definition of balance? 😉
…and now I’m sipping on some nighttime tea, on my third round of watching the entire series of How I Met Your Mother. My life is all sorts of exciting, I know.
