Hi friends, happy Friday!
Can you believe Christmas is less than 10 days away?! I don’t know about you, but I’ve been running around like a crazy woman pretty much since November 1st. With new projects, new clients, planning a holiday party, AND trying to maintain a social life…let’s just say the end of 2016 has been a bit of a blur 😉
Yesterday I “treated” myself to working from home most of the day. Before throwing myself back into the world of holiday parties I gave myself some R&R, went to a SoulCycle class, and enjoyed comfort food…with a healthy twist.
I always forget to show my morning coffee on these WIEIAD posts, but I finally remembered! Every single day right when I wake up I enjoy a big mug of Nespresso (this flavor is Banana Bread) with almond or cashew milk (this time a combo by Almond Breeze) and stevia.
After answering all of my emails and getting caught up with work, I made myself a quick and easy breakfast: an egg and veggie scramble with Laughing Cow Creamy Swiss Garlic & Herb cheese. This is my favorite flavor of Laughing Cow – the key is to mix it in while the eggs are still on the stove and it gets super creamy and coats the whole scramble. YUM.
For lunch after SoulCycle I was craving all the carbs. I’m still loving these Ezekiel Sprouted Whole Grain English Muffins, so I made an open-face sandwich with mashed avocado, red pepper hummus, and grilled tempeh. On the side I had a baby spinach salad and Enlightened garlic & onion roasted broad beans.

For dinner the carb-fest continued with the COZIEST recipe I came up with – Skinny Pizza Pasta Bake. I’ll share the recipe later today!
Before heading out to a few parties, I had to wrap up my comfort food day with ice cream, of course 😉 Enlightened to the rescue again! This is a recycled pic, but I had a small bowl of the mint chocolate chip.
